This Ham Fried Rice tastes just like the kind you can find in your favorite chinese restaurant.  You can use this recipe as a side dish or a main dish!  You can also change it up and substitute chicken or have both chicken and ham.

This is so easy to make and it freezes well too.  I like to make a double batch and freeze half of it for another day then use what is left for dinner.  All you have to do when you take it out of the freezer is defrost it and heat it up in a wok or frying pan with a little bit of oil to keep it from sticking.  My kids tell me it tastes good  just heated up in the microwave too!

Cook the rice a day ahead for best results or buy some from a local Asian restaurant.  I have also used instant rice and it is still good.  Another thing that makes a big difference is the quality of the ham.  You can also switch it up by using more veggies or just meat.  This is one recipe that you can totally cater to your own tastes and that of your familys and still have fantastic results!  This is a delicious and nutricious meal that even the pickiest eaters like!

Freezer Meal Recipe: Ham Fried Rice

Freezer Meal Recipe:  Ham Fried Rice

Ingredients

  • 1 - 2 green onions, as desired
  • 2 large eggs
  • 1 teaspoon salt
  • Pepper to taste
  • 4 tablespoons oil for stir-frying, or as needed
  • 4 cups cold cooked rice
  • 1 - 2 tablespoons light soy sauce or oyster sauce, as desired
  • 1 cup cubed ham or chicken (or both)
  • 1 pkg frozen mixed veggies (you could chop up fresh veggies as well most vegetables work well.)

Instructions

  1. Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.
  2. Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
  3. Add 2 tablespoons oil. Add the rice, cubed ham, and veggies. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.
  4. When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.
  5. For Freezer Meal cooking you can add your cooked Fried Rice (cooled) to gallon ziploc bags or in a 9×13 size pan covered with foil. If frozen in pan put in the oven for about 30-40 minutes at 350 degrees to heat through. If frozen in ziploc bag, thaw and heat in skillet or microwave until hot.

Fried Rice in Freezer Bag

This is how I freeze mine.  Just slide it in a freezer bag and label it.  It will keep for a few months before it starts to taste a little funny from the freezer.  I have never really had to worry about it being in the freezer too long it is one of the first ones that is taken out.
